Bacon & Cheddar Mini Corn Loaves

Prep 15 min Total Time 40 min Servings 15

Ingredients

1 package Krusteaz Honey Cornbread & Muffin Mix

1/2 cup milk

1/3 cup vegetable oil (or melted butter)

1 egg

1 cup drained, canned corn

1/2 cup cooked and crumbled bacon

1/2 cup shredded cheddar cheese

1/4 cup chopped green onion

  1. //Preheat oven to 400°F. Lightly grease three 5x3x2-inch mini loaf pans.
  2. //In large bowl, stir together all ingredients until well blended. Pour into prepared pans.
  3. //Bake 23-27 minutes or until light golden brown.
  4. //For muffins: spoon batter into 12 greased or paper-lined muffin cups. Bake 18-20 minutes.
