Lemon & Raspberry Mousse Pie

Ingredients

1 package Krusteaz Lemon Bar Mix (1 pouch each lemon filling mix and complete crust)

16 oz heavy whipping cream

1-2 drops yellow food coloring

1 1/2 cup fresh raspberries, divided

Lemon slices for garnish, optional

Instructions

  • Preheat oven to 350°F.
  • Press full pouch of complete crust firmly into bottom and up sides of lightly greased 9-inch pie pan.
  • Bake 15 minutes.
  • Let cool completely.
  • Place whipping cream, full pouch lemon filling mix and yellow food color in large bowl.
  • Using an electric mixer, mix on high speed until mixture is thick.
  • Gently fold in 1 cup of raspberries.
  • Spoon mousse into baked pie shell and chill 2-3 hours or overnight.
  • For firmer set, freeze several hours or overnight and serve frozen.
  • Garnish with lemon slices and 1/2 cup fresh raspberries, if desired.
