What temperature should the water be?
For muffins with the best height and texture, we recommend a cool water temperature (70ºF-72ºF).
Can I overmix the muffin batter?
Mix the muffin batter just long enough to moisten all the dry ingredients. Some muffin batters will have lumps. Overmixing the batter can cause the baked muffins to be tough and chewy with lower volume.
Can the muffin batter be made in advance?
Once the muffin batter is mixed, we recommend you proceed with baking the muffins. Batter that sits too long can produce muffins with low volume.
What can I do to insure uniform muffins?
Using an ice cream scoop to portion the batter takes all the guess work out. For standard 2 ounce muffins, use a #20 scoop. For jumbo 4 ounce muffins, use a #8 scoop. For mini 1 ounce muffins, use a #40 scoop.
Is it better to grease my muffin pans or use paper liners?
Depending on personal preference, the choice is up to you. Paper liners are easy to use with the least amount of clean up. Always let muffins cool about 5 minutes before trying to remove from the pan to prevent crumbling.
How can I tell if the muffins are done?
Typically, the muffin top will spring back when touched lightly. You may insert a toothpick into the muffin and it should come out clean and free of batter. If there is a lot of fruit in the muffin, the toothpick may not come out clean.
Can I bake the muffins in the microwave oven?
Our goal is for you to be absolutely delighted with our product. In less than 20 minutes in your conventional oven, you will have perfect muffins. The microwave oven is great for warming muffins, but not for baking. To reheat, microwave on HIGH 10-15 seconds per muffin.
What is the best way to store baked muffins?
Cool the muffins completely after baking and store in an airtight container in the freezer or at room temperature. Do not store in the refrigerator because this will dry the muffins out. To serve, allow muffins to thaw at room temperature, then warm, if desired.
Can I add other ingredients?
Adding approximately 1/2 cup ingredients such as fruit, grains or nuts adds variety in flavor and texture. If adding moist ingredients like applesauce, reduce water by 1/4 cup. For additional ideas click on recipe central.
Do you make fat free muffin mixes?
In response to customer requests for products low in fat or fat free, we have several delicious fat free and low fat muffin mixes. Our fat free muffins have been described in independent taste tests as “Excellent”, “Just like the real thing” and “Can this really be fat-free?” Look for more information on these muffins and other Krusteaz favorites in the product listing.
What is the shelf life of your muffin and crumb cake mixes and how should I store them?
The key is proper storage. We recommend storing flour mixes in a cool (70ºF or below), dry environment. It is best to use the mix within an 18-month period. The muffin and crumb cake mixes do not contain any perishable ingredients.
