Apple Spice Pecan Muffins

2 cups Krusteaz Apple Spice Pancake Mix
1 cup water
1/2 cup raisins
1/2 cup grated carrots
1/2 cup chopped pecans
1/4 cup packed brown sugar
1 egg
2 tablespoons vegetable oil
1 teaspoon cinnamon

Preheat oven to 400ºF. In medium bowl, stir together Krusteaz Apple Spice Pancake Mix and remaining ingredients until moistened. Spoon batter into lightly greased muffin pan, filling 2/3 full. Bake 15-20 minutes or until toothpick inserted into center comes out clean.
Makes 10-12 muffins.
