Blueberry Pancake Mix
Blueberry Muffins
2 1/2 cups Krusteaz Blueberry Pancake Mix*
2/3 cup water
1/2 cup sugar
1/4 cup vegetable oil
1 egg
Preheat oven to 400°F. In medium bowl, stir together pancake mix and remaining ingredients until moistened. Do not overmix. Spoon batter into lightly greased or paper-lined muffin pan, filling 2/3 full. Bake 14-16 minutes or until toothpick inserted into center comes out clean.
Makes 1 dozen muffins.
*Great with Krusteaz Chocolate Chip Pancake Mix too!
