Blueberry Pancake Mix

Blueberry Coffee Cake
Cake:
2 1/2 cups Krusteaz Blueberry Pancake Mix*
1 cup water
1/4 cup sugar
1 egg
1 teaspoon vanilla
Topping:
1/4 cup Krusteaz Blueberry Pancake Mix*
1/4 cup packed brown sugar
1 teaspoon cinnamon
2 tablespoons butter
1/2 cup chopped pecans
Preheat oven to 350°F. For Cake: In large bowl, stir together 2 1/2 cups pancake mix, water, sugar, egg and vanilla until moistened. Spoon batter into lightly greased 8x8x2-inch pan. Set aside. For Topping: In small bowl, stir together 1/4 cup pancake mix, brown sugar and cinnamon. Cut in butter with fork or pastry blender until mixture is crumbly. Stir in pecans. Sprinkle evenly over batter. Bake 25-30 minutes or until toothpick inserted into center comes out clean.
Makes 16 servings.
*Great with Krusteaz Chocolate Chip Pancake Mix too!
