Blueberry Pancake Mix
Tropical Dream Pancakes
Pancakes: 2 cups Krusteaz Blueberry Pancake Mix 1 1/3 cups water Topping: 3/4 cup sour cream 1/4 cup crushed, drained pineapple 1/4 cup flaked coconut 2 tablespoons powdered sugar macadamia nuts, chopped (optional) Preheat griddle to 375ºF. For Pancakes: In medium bowl, blend together Krusteaz Blueberry Pancake Mix and water with a wire whip. Batter will be slightly lumpy. Pour slightly less than 1/4 cup batter per pancake onto lightly greased griddle. Cook pancakes 1-1 1/4 minutes per side, or until golden brown, turning only once. For Topping: In small bowl, blend together sour cream, pineapple, coconut and powdered sugar. Spoon over pancakes. Garnish with macadamia nuts, if desired. Makes 12-14, 4-inch pancakes.
