Belgian Waffle Mix
Lemon Creme Waffles
Waffles: 3 cups Krusteaz Belgian Waffle Mix 2 eggs 1/3 cup oil 1 1/2 cups water 2 tablespoons lemon zest Topping: 1 cup (8 oz package) cream cheese, softened 1 2/3 cups (15.75 oz can) lemon pie filling 1/4 cup flaked coconut Preheat Belgian waffle iron. For Waffles: In medium bowl, blend together Krusteaz Belgian Waffle Mix, eggs, oil, water and lemon zest with a wire whip. Batter will be slightly lumpy. Pour batter onto prepared waffle iron. Cook waffles 3-4 minutes until golden brown, or according to waffle iron directions. For Topping: Spread cream cheese on waffles. Top with lemon pie filling. Sprinkle with flaked coconut. Makes 4-5, 7-inch round waffles.
