Low Fat Oat Bran Pancake Mix
Gingerbread Pancakes
2 cups Krusteaz Low Fat Oat Bran Pancake Mix 1 1/4 cups water 1 tablespoon molasses 1/8 teaspoon ground cinnamon 1/8 teaspoon ground ginger 1/8 teaspoon ground nutmeg 2 1/3 cups (21 oz can) lemon pie filling Preheat griddle to 375ºF. In medium bowl, blend together Krusteaz Low Fat Oat Bran Pancake Mix, water, molasses and spices with a wire whip. Allow batter to thicken 5 minutes. Pour slightly less than 1/4 cup batter per pancake onto well greased griddle. Cook pancakes 1 - 1 1/4 minutes per side, or until golden brown, turning only once. Serve with warmed lemon pie filling. Makes 8-10, 4-inch pancakes.
