Wheat & Honey Pancake Mix

Banana Nut Bread
2 eggs
1/3 cup packed brown sugar
1/3 cup sugar
1 cup mashed bananas (2 medium)
1/2 cup vegetable oil
1 teaspoon vanilla
1 1/2 cups Krusteaz Wheat & Honey Pancake Mix*
1/2 cup chopped pecans or walnuts (optional)
Preheat oven to 350°F. In medium bowl, blend together eggs and sugars. In separate bowl, blend together bananas, oil and vanilla. Add pancake mix to egg mixture alternately with banana mixture. Mix well. Fold in nuts. Spoon into greased and floured 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake 45-50 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes in pan. Transfer from pan to wire rack.
Makes 1 loaf.
Variations:
Apple Cinnamon Bread: Prepare banana nut bread as directed, omitting bananas and vanilla. Add 1 peeled and chopped apple and 1 teaspoon cinnamon. Bake as directed.
Pumpkin Spice Bread: Prepare banana nut bread as directed, omitting bananas and vanilla. Add 3/4 cup canned pumpkin and 1 teaspoon pumpkin pie spice. Bake as directed.
