Ingredients
1 package Krusteaz Chocolate Chunk Muffin Mix
1/2 cup strong brewed coffee
1/3 cup vegetable oil
3 eggs
1/2 cup chocolate covered espresso beans, finely chopped
Instructions
- Preheat oven to 400°F. In medium bowl, stir together muffin mix, coffee, oil and eggs until well blended. Fill lightly greased or paper-lined muffin cups 2/3 full. Top muffin batter with espresso beans. Bake 17-19 minutes. Cool 5 minutes before removing from pan.
