Ingredients

Cake

2 1/2 cups Krusteaz Blueberry Pancake Mix*

1 cup water

1/4 cup sugar

1 egg

1 teaspoon vanilla

Topping

1/4 cup Krusteaz Blueberry Pancake Mix*

1/4 cup packed brown sugar

1 teaspoon cinnamon

2 tablespoons butter

1/2 cup chopped pecans

Instructions

  • Preheat oven to 350°F.
  • For Cake: In large bowl, stir together 2 1/2 cups pancake mix, water, sugar, egg and vanilla until moistened.
  • Spoon batter into lightly greased 8x8x2-inch pan.
  • Set aside.
  • For Topping: In small bowl, stir together 1/4 cup pancake mix, brown sugar and cinnamon.
  • Cut in butter with fork or pastry blender until mixture is crumbly.
  • Stir in pecans.
  • Sprinkle evenly over batter.
  • Bake 25-30 minutes or until toothpick inserted into center comes out clean.
*Great with Krusteaz Chocolate Chip Pancake Mix too!
