Start with: For cookie: 1 egg and 1 stick (1/2 cup) butter or margarine, softened (not melted) For glaze: 3 1/2-4 tsp water

Just three easy steps

  1. // Heat oven to 350°F. (If using an insulated cookie sheet, set oven to 375°F.) If necessary, soften cold butter in microwave on HIGH power for 10-15 seconds.
  2. // Stir together egg, butter and cookie mix until dough forms, hand kneading if necessary. Scoop dough according to desired cookie size. Place 2 inches apart onto ungreased cookie sheet. For cookie bars, press dough into lightly greased 8x8-inch pan.
  3. // Bake as directed or until light golden brown around edges. Cool 5 minutes and remove from pan.
  4. // For glaze: Whisk together spiced vanilla glaze mix (enclosed) and water, while gradually adding the water until glaze is desired consistency. Spread glaze on each cooled cookie. Allow to set. Store cookies in airtight container.

High Altitude (over 5,000 feet): Prepare as directed, adding 2 tablespoons all-purpose flour.

    Ingredients

    1 package Krusteaz Pumpkin Spice Cookie Mix

    1 egg

    ½ cup butter, softened

    2 apples (cored, peeled and sliced thinly)

    ¼ cup sugar

    ½ teaspoon cinnamon

    2/3 cup oats

    1. //Heat oven to 350°F. Prepare a pizza pan by spraying with cooking spray, or lightly coat a pizza stone with a thin layer of oil.
    2. //Stir together cookie mix, egg and butter until dough forms, hand kneading if necessary. Take out 1/3 cup cookie dough and save for topping. Roll out the remaining dough onto the pizza pan.
    3. //Bake 8 minutes or until edges start to brown.
    4. //Toss sliced apples with sugar and cinnamon and place in a single layer on top of crust. Add oats to the reserved cookie dough and mix well. Sprinkle the mixture on top of the apple layer. Bake 15-17 minutes, until crumble on top is crisp.
    5. //Let cool before preparing the glaze according to package instructions and drizzle over the top of the pizza.
  • Pumpkin Spice Cookie Sandwiches with Cream Cheese Filling

    1 package Krusteaz Pumpkin Spice Cookie Mix

    1 egg

    1/2 cup (1 stick) unsalted butter, softened

    1/2 cup white chocolate chips

    1/2 cup dried cranberries

    8 oz. cream cheese, softened

    1-2 tablespoons milk, if needed

    1. //Preheat oven to 350°F. In a large mixing bowl, combine Krusteaz Pumpkin Spice Cookie Mix (minus the icing pouch), egg, and butter. Mix until fully combined. Add white chocolate chips and cranberries; mix thoroughly.
    2. //Scoop cookies onto lined cookie sheet and bake 10-12 minutes. Let cookies cool.
    3. //While cookies cool, combine cream cheese and contents of the icing pouch until smooth. Add 1-2 tablespoons milk to reach desired consistency.
    4. //Match the cooled cookies in pairs. Pipe or spread filling onto one of each pair and sandwich together.

I bought this mix to make cookies for a party. What a disappointment! I expected flat cookies. Mine never flattened at all. They came out of the oven looking just like the scoops of dough I'd put in. They baked through, but looked like lumps of raw cookie dough.
And even with more water than the instructions called for, there wasn't enough glaze for the tops of the cookies. It never would have done the larger, flatter cookies I expected.
I've bought other Krusteaz mixes before, but this box was not the quality I've come to expect.
