Just three easy steps

  1. // Heat pancake griddle to 375°F (medium heat). Lightly grease griddle.
  2. // Stir pancake mix, milk, egg(s) and oil together with a wire whisk. (Do not overmix.) Let batter stand 4 minutes. Pour slightly less than 1/4 cup batter per pancake onto griddle.
  3. // 3 Cook pancakes 2 minutes per side, or until golden brown, turning only once.

For thinner pancakes add more milk, for thicker pancakes add more mix.

EASY WAFFLES: Preheat and lightly grease waffle iron. Prepare batter as directed for pancakes. Pour batter onto waffle iron and cook until golden brown (or follow waffle iron manufacturer’s cooking instructions).

    1 ¼ cups milk

    1 egg

    ¼ cup oil

    3 tablespoons ricotta cheese

    2 tablespoons finely grated lemon zest
