Loaf Pan Prep: For best results use 8½ x 4½ x 2” loaf pan

1. Heat oven to 350F. Lightly grease loaf pan. Set aside.

2. Mix together 1 cup water and 1 large egg until blended. Add muffin mix and stir until moistened. Gently fold undrained cranberries into batter. Spoon batter into pan and spread evenly.

3. Bake 38-42 minutes, or until toothpick inserted into the center of the loaf comes out clean. Cool 5 minutes; gently loosen and remove from pan.

This recipe results in a product that is not fat free. To remain fat free: Use two large egg whites instead of the 1 large egg.

I missed this recipe on the side of the box. I added more dried cranberries, walnuts and the juice from the can of cranberries. This is best served on the second day. Yummy!
