Cinnamon Apple Pie Pancakes

Servings: 4-5 large pancakes
2 cups Krusteaz Buttermilk Pancake Mix
2/3 cup water
2/3 cup apple juice
1 teaspoon cinnamon
1 teaspoon brown sugar
1 teaspoon vanilla extract
Cinnamon Apples, prepared, see recipe below
Heat pancake griddle to 375°F (medium heat). Lightly grease griddle.
Stir pancake mix, water, juice, cinnamon, brown sugar and vanilla extract together with a wire whisk. Batter will be slightly lumpy. (Do not overmix.)
Pour slightly less than 1/3 cup batter per pancake onto griddle.
Cook pancakes until done on griddle 1- 1 1/4 minutes per side, or until golden brown, turning only once. Fill with prepared cinnamon apples and top with syrup, as desired.
Chop 2 apples into bite sized pieces. In a small pan over low heat, combine 3 tablespoons of butter with ¼ cup brown sugar. Heat until butter is melted and sugar is combined. Add apple pieces and 1 teaspoon cinnamon and continue to cook for 7-8 minutes. Remove from heat and serve with pancakes.
