Breakfast for dinner brings me to a happy feel-good place in my soul. It’s so homey and comforting, like a big hug from the inside. Whenever I create a breakfast recipe, I always make it for dinnertime first, just to make sure it hits that sweet spot. And that’s how my Flapjack Breakfast Bake came to be. I’m calling it “breakfast bake”, because it would make an impressive addition to a brunch or breakfast gathering, but let’s be honest. At my house, it’s all dinner all the time. The hero ingredient is Krusteaz Light & Fluffy Buttermilk Pancake Mix, which is delicious in pancake form of course, but part of the fun in being a member of the Krusteaz Baker’s Dozen is to think outside the box and create new ways to use Krusteaz baking mixes. So I did. In a big ole bowl, I mixed up some Krusteaz Light & Fluffy Buttermilk Pancake Mix, water and maple syrup, then stirred in lots of cooked and crumbled sausage and bacon. Yeah, baby. Spoon half of that magic mixture into a baking pan. Next you’ll add a layer of thinly sliced apples, and sprinkle them with cinnamon and brown sugar. Top with the remaining pancake batter mix, and bake that beauty to a golden brown. When it’s almost done, make some scrambled eggs and sprinkle them along with some shredded cheese over the top of the “cake”. Bake for about 5 more minutes to get the cheese all melty. Be sure to reserve a little bacon to sprinkle on top too. Cut and serve in squares and drizzle with maple syrup. It’s absolutely delicious!

3 cups Krusteaz Buttermilk Pancake Mix
1/4 cup water
1/2 cup maple syrup
8 ounces breakfast sausage, cooked and crumbled
1 package (about 13-15 slices) pre-cooked bacon, cooked and chopped (reserve a small amount for topping)
1 medium Macintosh apple, cored, peeled and sliced into 1/8" thick slices
1/4 cup lightly packed brown sugar
1 teaspoon cinnamon
1/2 cup cheddar cheese
Preheat oven to 350°F. Lightly coat an 11x7-inch baking pan with cooking spray. In large bowl, mix together pancake mix, water and maple syrup. Add sausage and bacon; mix in. Pour half of the batter mixture into prepared baking pan. Layer the apple slices over the batter mixture. Sprinkle brown sugar and cinnamon over the top of apples.
Bake 40-45 minutes until firm and golden brown. During the last 10 minutes of baking, scramble two eggs and set aside. Remove baking pan from oven. Sprinkle with scrambled eggs, cheddar cheese and leftover chopped bacon.
Bake for an additional 5 minutes or until cheese is melted. Cut into squares, and serve with warm maple syrup drizzled over the top.
