Pumpkin Cream Cheese Muffins

Pumpkin “season” is coming to a close with its last big day on Thanksgiving. So I decided to end the season with these delicious Pumpkin Cream Cheese Muffins. They make the perfect Thanksgiving morning breakfast or a family favorite dessert at our Thanksgiving table. 

  • Prep time: 10 Minutes
  • Total Time: 30 minutes
  • Servings: 12 muffins



  • 1 package Krusteaz Pumpkin Spice Muffin Mix
  • 2/3 cup water
  • 1/4 cup oil
  • 2 eggs


  • 8 oz. cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract


  1. 1. Heat oven to 350°F. Lightly spray 12 muffin cups with non-stick cooking spray or line with muffin liners.
  2. 2. In a medium bowl, stir quick bread mix, water, vegetable oil and egg until combined. Using an ice cream scooper, scoop muffin batter into prepared muffin tins. 
  3. 3. In a large bowl, mix cream cheese, sugar, egg yolk and vanilla together until smooth. Top each muffin with 1 tablespoon of cream cheese mixture and use a toothpick to swirl into the batter. 
  4. 4. Bake 14-16 minutes or until a toothpick inserted into the center of the muffins comes out clean. Let cool.
