Raisin’ the Bar

This recipe was created for the Eugene Marathon.

 Prep Time: 10 minutes

Total Time: 35 minutes

  • 1 package Krusteaz Brown Sugar Oatmeal Cookie Mix
  • 1/3 cup coconut oil
  • 1/3 chopped walnuts
  • ¼cup chopped raisins
  • ¼ cup dried cranberries
  • ¼ cup finely chopped dried whole dates
  • ¼ cup pumpkin seeds
  • 2 tablespoons butter
  • 2 tablespoons flax meal
  • 1 egg

 

Cookie Prep:

Heat oven to 350°F. In medium bowl, stir together all ingredients until blended. Spoon dough by rounded tablespoons and place 2 inches apart onto ungreased cookie sheet. Bake 10-12 minutes. Cool before removing from pan.  Makes 12 cookies.

Bar Prep:

Heat oven to 350°F. In medium bowl, stir together all ingredients until blended. Spread dough evenly in a prepared 9x9x2 inch baking pan. Bake 23-26 minutes. Cool before removing cutting.
