Raspberry Skillet Pancake

1 cup Krusteaz Buttermilk Pancake Mix
2/3 cup cold water
1 large egg
1 tablespoon unsalted butter
1 cup raspberries or other berries Confectioners’ sugar, for garnish


Preheat oven to 375°F. Place a 9- or 10-inch cast iron skillet in oven while you prepare the pancake batter. Whisk together pancake mix, water, and egg just until combined. Remove skillet from oven. Place butter in skillet and carefully swirl to coat. Pour batter into skillet. Sprinkle berries over the top of the batter. Bake for 25 to 30 minutes, or until golden brown.

If desired, sprinkle with confectioners’ sugar when serving.
