
Fire Roasted Cornbread
Fire Roasted Cornbread made elote style, with a chili lime and cheese topping.

Start with: 2/3 cup water, 1/2 cup mayonnaise, and 1/3 cup butter, melted
Just three easy steps
- // Heat over to 375°F. Lightly grease baking pan, cast iron skillet, or muffin pan.
- // Stir together water, butter, mayonnaise and full box cornbread mix until blended. Spoon batter into pan of fill muffin cups 2/3 full.
- // Bake as directed below or until light golden brown. Sprinkle the seasoned cheese (enclosed) evenly over the baked cornbread. For muffins, cool 5 minutes; gently loosen and remove from pan. Cool completely and store in tightly covered container.
To prepare without mayonnaise, combine cornbread mix, 2/3 cup m,ilk 6 tbsp melted butter and one egg. Bake in a lightly greased 8x8-inch pan for 18-21 minutes at 325°F.
Brush baked cornbread with 1 tablespoon melted butter before sprinkling with seasoned cheese for better adherence.
