Apple Cinnamon Scones

Ingredients

  • 4 cups  Krusteaz Buttermilk Pancake Mix
  • 1/2 cup All purpose flour
  • 2/3 cup Sugar
  • 1 tbsp Cinnamon
  • 1 ½ cups Diced fresh apples
  • 1 cup Heavy cream, plus extra for brushing tops
  • 1 Egg
  • 1/2 cup (1 stick) Cold butter, cubed
  • Maple Glaze
  • 1 cup Powdered sugar
  • 1/4 cup Milk or heavy cream
  • 1/2 tsp Maple extract

Directions

STEP 1

Heat oven to 400°F. Line baking sheet with parchment paper or lightly grease.

STEP 2

In a large bowl, combine Buttermilk Pancake Mix, flour, sugar and cinnamon. Using a pastry blender, fork or stand mixer, cut in butter until mixture resembles coarse crumbs. You can use a food processor to mix dry ingredients and then pulse in butter.

STEP 3

Stir in diced apples. Whisk egg and heavy cream together and add to mixture. Stir into dry mixture until dough forms and is well combined. Dough will be soft, but not sticky, and easy to work with.

STEP 4

Turn dough out onto a lightly floured surface. Divide dough in half and shape each half into a slightly domed 6-inch disc. Cut each disc into 6 wedges and place 2 inches apart onto prepared baking sheet. Brush tops with heavy cream.

STEP 5

Bake for 14-16 minutes. Cool for 5 minutes.

STEP 6

For Glaze: Whisk all ingredients together until smooth. Add more milk (or cream) if necessary for desired consistency. Drizzle over scones and let set before serving.
