Apple Cranberry Cobbler

Ingredients

  • TOPPING
  • 4 cups Krusteaz® Buttermilk Pancake Mix
  • 6 tbsp Butter, melted
  • 2 Eggs, lightly beaten
  • 1 cup Water
  • FILLING
  • 6 Medium Granny Smith apples, thinly sliced
  • 1½ cups Dried cranberries
  • 1 cup Sugar
  • 2 tTsp Ground ginger OR 1 tbsp fresh ginger, grated (optional)
  • 1 tsp Lemon juice
  • 3 tbsp Butter, cut in small cubes

Directions

STEP 1

Heat oven to 400°F. Lightly grease 13x9-inch pan.

STEP 2

For Filling: Combine apples, cranberries, sugar, ginger, and lemon juice. Spread fruit evenly in bottom of prepared pan. Distribute butter over top of fruit.

STEP 3

For Topping: Combine pancake mix, melted butter, eggs and water until moistened. Drop mixture over fruit.

STEP 4

Bake 35-45 minutes or until top is golden brown and filling is soft and bubbly.

STEP 5

Serve warm with whipped topping or ice cream, if desired.
