Mix the pancake mix with milk, cinnamon, rose water, and cardamom. Don’t overmix. The batter will be lumpy and that’s okay. Let it sit for 10 minutes.
Heat the griddle or the pan. Grease lightly with just a little bit of butter.
Pour about ¼ cup batter in the pan and let it cook. Flip and cook for another 2 minutes.
In a bowl, mix the walnuts, pistachios and sugar. Place one pancake on the plate, top with honey and nuts. Place another pancake and again top with honey and nuts.
Repeat until you have a nice stack of pancakes. Top with a scoop of ice cream and enjoy.
