Heat waffle iron according to manufacturer instructions and heat oven to 350°F.
Measure pancake mix by lightly spooning into measuring cup and leveling off.
Combine water, eggs and oil in large bowl until blended. Add pancake mix and whisk until combined. Let batter stand 2 minutes.
Scoop batter onto waffle iron (about 2/3 cup or #12 scoop per square) and cook until steaming stops and waffles are golden brown, about 3-5 minutes.
Carefully remove waffles from iron and separate squares. On one square, place 1 oz brie, spread about 1 tablespoon jam and place 8 berry halves on top. Top with a second waffle square.
Continue until all waffles are cooked and all sandwiches are assembled.
Place waffle sandwiches on lightly greased or paper-lined baking sheet. Place in oven and let warm approximately 5 minutes or until brie is melty. Serve warm.
