Heat oven to 350°F.
In microwave safe bowl, mix together oil, water and pancake mix. Microwave uncovered on HIGH for 30 seconds.
Stir mixture and return to microwave, heating on HIGH for an additional 45 seconds.
Remove from microwave and mix in egg, 4 tablespoons cheese and ground pepper.
Scoop batter by rounded tablespoons and place 1 inch apart onto parchment-lined baking sheet. For best results, chill puffs 20 minutes before baking.
Sprinkle ½ teaspoon cheese over top of each puff.
Bake 27-32 minutes (if not chilling, reduce bake time to 20-25 minutes).
