Cacio e Pepe Cheese Puffs

Ingredients

  • 6 tbsp Krusteaz® Buttermilk Pancake Mix
  • 3 tbsp Vegetable oil
  • 7 tbsp Water
  • 1 Egg
  • 4 tbsp Pecorino Romano or Parmesan cheese, grated (for batter)
  • ¼ tsp Freshly ground pepper
  • 3 tbsp Pecorino Romano or Parmesan cheese, grated (for topping)

Directions

STEP 1

Heat oven to 350°F.

STEP 2

In microwave safe bowl, mix together oil, water and pancake mix. Microwave uncovered on HIGH for 30 seconds.

STEP 3

Stir mixture and return to microwave, heating on HIGH for an additional 45 seconds.

STEP 4

Remove from microwave and mix in egg, 4 tablespoons cheese and ground pepper.

STEP 5

Scoop batter by rounded tablespoons and place 1 inch apart onto parchment-lined baking sheet. For best results, chill puffs 20 minutes before baking.

STEP 6

Sprinkle ½ teaspoon cheese over top of each puff.

STEP 7

Bake 27-32 minutes (if not chilling, reduce bake time to 20-25 minutes).
