Heat oven to 400°F. Lightly grease standard muffin pan.
Measure pancake mix by lightly spooning it into measuring cup and leveling it off.
Whisk pancake mix, buttermilk, melted butter and vanilla together. Do not over-mix.
Place dough on surface lightly dusted with pancake mix. Roll dough into 15”x10” rectangle.
Spread cherry preserves over bottom half of dough. Sprinkle chocolate chunks/chips over preserves.
Fold top half of dough over filling.
Slice folded dough into 12 strips.
Twist each strip several times and then roll up. Place twist into prepared muffin pan.
Brush top of twists with beaten egg. Bake 14-16 minutes.
Cool slightly; gently loosen and remove from pan. Drizzle with glaze (recipe follows), if desired
Optional Glaze prep: Stir powdered sugar and milk together until smooth, adding more milk until desired consistency.
