Heat oven to 375°F. Line a standard muffin pan with liners or lightly grease it.
Cut pouch open at top corner.
Pour the batter into each cup, filling them 2/3's full.
Bake for 18-23 minutes or until a toothpick inserted into the center comes out clean.
Cool completely before frosting.
In a small bowl, stir the prepared white frosting and mint extract together. Pipe or spread the frosting onto the cupcakes.
Sprinkle crushed cookies over the frosting and garnish each cupcake with a whole cookie on top.
