Corn Fritters

Ingredients

  • 1 cup Krusteaz® Buttermilk Pancake Mix
  • ½ cup Whole milk yogurt
  • ¼ cup Water
  • 1 Jalapeño, seeded / minced
  • 2 Scallions, finely chopped
  • 1½ cups Fresh corn kernels, taken off the cob
  • 1 tsp Salt
  • 1 tsp Cracked black pepper
  • 1 tbsp Vegetable or canola oil

Directions

STEP 1

Combine all of the ingredients except the oil into a bowl.

STEP 2

Heat oil in deep fryer or pan to 350'F.

STEP 3

Carefully drop ping pong size balls of fritter batter into oil - 5-6 at a time so oil temperature doesn't drop too much.

STEP 4

Fry until golden brown on all sides and drain on paper towels or newspaper.

STEP 5

Serve on their own, or with yummy BBQ.
