Glazed Apple Walnut Cake
Heat oven to 350°F. Lightly grease 8x4-inch loaf pan.
Peel and grate medium apple. Tip: Use 2 coffee filters to squeeze liquid out of grated apples. Reserve for use in glaze.
In medium bowl, stir together apple juice, melted butter and eggs until well blended. Stir in pound cake mix, grated apples, cinnamon and walnuts.
Spoon batter evenly into prepared pan. Bake 48-52 minutes or until toothpick inserted into center comes out clean.
Cool slightly, then remove from pan. Cool completely.
Combine glaze mix and 1 ½ tablespoons reserved apple juice until smooth. Add more apple juice, 1 teaspoon at a time, until glaze is desired consistency.
Drizzle glaze over top of loaf and sprinkle with additional walnuts, if desired.
