Gluten Free Blueberry Muffins

Ingredients

  • 1½ cups Krusteaz® Gluten Free All-purpose Flour
  • 5 tbsp Unsalted butter, softened
  • ½ cup Sugar
  • 1 Egg
  • ¾ tsp Baking powder
  • ¼ tsp Baking soda
  • ¼ tsp Salt
  • ¾ cup Plain yogurt
  • 2 tsp Finely grated lemon zest
  • 1 cup Fresh blueberries
  • 3 tbsp Raw sugar

Directions

STEP 1

Preheat the oven to 375⁰F. Line muffin pan with paper liners.

STEP 2

In medium bowl, combine butter, sugar and egg. Add Krusteaz Gluten Free All Purpose Flour, baking powder, soda, salt, yogurt and lemon zest; stir until well blended. Gently fold in berries. Batter will be thick. Fill muffin cups 2/3 full, sprinkle tops with raw sugar.

STEP 3

Bake 20-26 minutes or until light brown.
