Delicious Italian skillet cornbread made with Krusteaz batter

Italian Cornbread Skillet

Ingredients

  • 1 box Krusteaz Southern Style Cornbread & Muffin Mix
  • 1 cup milk
  • ⅓ cup butter, melted
  • 2 eggs
  • ⅓ cup pepperoni, chopped
  • 3 tbsps roasted red peppers, diced
  • ½ cup cherry tomatoes, quartered
  • ½ tsp oregano
  • ½ cup shredded cheese (Cheddar, Mozzarella, etc.)
  • Marinara sauce, optional

Directions

STEP 1

Heat oven to 400°F. Lightly grease 10-inch cast iron skillet.

STEP 2

Prepare the peppers and tomatoes, and chop the pepperoni.

STEP 3

Whisk together milk, melted butter, and eggs in large bowl. Add cornbread mix, pepperoni, peppers, tomatoes, oregano, and shredded cheese. Stir until blended.

STEP 4

Pour batter into prepared skillet.

STEP 5

Bake 24 - 26 minutes or until a toothpick inserted in center comes out clean. Top should be golden brown.

STEP 6

Serve warm with marinara sauce, if desired.
