Lemon Cream Blueberry Waffles
Lightly grease and preheat Belgian or conventional waffle iron. Whisk together full box waffle mix, water, eggs, oil, and lemon zest. Let batter stand 2 minutes. Pour about 2/3 cup batter onto waffle iron. Cook waffles 3-4 minutes or until golden brown (or follow waffle iron manufacturer's cooking instructions).
To prepare topping, stir together sour cream, honey and lemon juice. Drizzle topping over freshly baked waffles.
