Preheat a non-stick griddle or large skillet over medium heat. Lightly grease with butter or cooking spray.
In a large mixing bowl, combine all wet ingredients. Whisk until the mixture is smooth and well combined.
Add in the Krusteaz Buttermilk Pancake Mix and whisk until combined. The batter will be slightly lumpy; do not overmix.
Pour about 1/4 cup of the pancake batter onto the cooking surface for each pancake. You can make the pancakes as small or as large as you prefer.
Cook until bubbles form on the surface of the pancakes and the edges start to look set, about 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
Serve warm with a drizzle of maple syrup, and savor every bite!
