Mini Streusel Blueberry Muffins

Ingredients

  • 2 cups Krusteaz® Buttermilk Pancake Mix
  • 1 cup Water
  • ½ cup Sour cream
  • 1½ cups Frozen blueberries, slightly thawed
  • ½ cup Brown sugar, packed
  • ½ cup Chopped walnuts
  • 1 tsp Ground cinnamon

Directions

STEP 1

Preheat to 425F and prepare a mini muffin tin (with muffin cups or nonstick spray)

STEP 2

Combine pancake mix and water

STEP 3

Add sour cream to pancake and water mixture. Stir

STEP 4

Fold in frozen blueberries

STEP 5

Add batter to muffin tin, filling almost to the top

STEP 6

Top with streusel mixture

STEP 7

Bake at 425F for 5 minutes. Then, keeping the muffins in the oven, reduce the oven temp to 350F and bake for another 6-8 minutes. Test doneness with a toothpick. You should be able to pull it out clean.

Let cool for a few minutes and enjoy!
