Ingredients

  • 2 cups Krusteaz® Buttermilk Pancake Mix
  • 1½ cups Cold water
  • 1 Egg
  • 2 tbsp Vegetable oil
  • 1 cup Chopped fresh spinach
  • ⅓ cup Crumbled bleu cheese
  • 1 tbsp Sumac
  • 1 cup Grape tomatoes, halved
  • 2 Small cucumbers
  • 2 tbsp Olive oil
  • 1½ tsp Dried mint
  • ¾ tbsp Kosher salt
  • 1 Scallion, sliced + additional for garnish

Directions

STEP 1

Preheat waffle iron.

STEP 2

Combine Krusteaz Buttermilk Pancake Mix, water, egg, vegetable oil, spinach, feta, and sumac in a large bowl until just combined.

STEP 3

Lightly spray waffle iron with non-stick cooking spray and place 1/3 cup waffle batter in the center of your preheated waffle iron. Close and cook according to manufacturer directions or until golden brown.

STEP 4

In a small bowl, combine tomatoes, cucumbers, olive oil, scallions, mint, and salt.

STEP 5

Place your waffle on a plate, add a dollop of labneh (or Greek yogurt), and cucumber salad. Finish with a sprinkle of additional scallions.

STEP 6

Waffles can be wrapped in wax paper and then placed into a freezer bag and frozen. To serve, remove and reheat.
