Blueberry Frosted Cookies
1 package Krusteaz Gluten Free Blueberry Muffin Mix
1/2 cup (1 stick) unsalted butter, softened
2 tablespoons lemon zest
1/2 cup (4 oz) cream cheese, room temperature
1 1/4 cups powdered sugar
1 tablespoon milk
1 can blueberries (enclosed), drained and rinsed
- // Preheat oven to 350°F.
- // For Cookies: In medium bowl, stir together Krusteaz Gluten Free Blueberry Muffin Mix, butter, egg and lemon zest until well blended. Scoop 2 rounded tablespoons dough and place 2 inches apart onto lightly greased cookie sheet. Press down slightly.
- // Bake 9-11 minutes or until golden brown around edges.
- // For Frosting: In medium bowl, blend cream cheese, powdered sugar and milk with hand mixer until fluffy; gently stir in blueberries. Frost cool cookies. Store in airtight container.
