Cinnamon Roll Fluffy Pancake Cups
Preheat oven to 375°F.
Divide butter into muffin pan cups. Place pan in the oven for 3-5 minutes while you are making the batter.
In medium bowl, beat egg, milk, brown sugar, vanilla, spices and salt; whisk in pancake mix.
Pour batter into the butter filled muffin cups.
For Paste: In separate bowl, combine softened butter, sugar and cinnamon to make a paste. Place in piping bag or Ziploc bag with snipped corner. Squeeze spirals of cinnamon mixture into batter in each muffin cup. Place pan in oven for 5 minutes at 375°F, then reduce the temperature to 350°F and continue to bake for another 10 minutes.
For Cream Cheese Glaze: Using an electric mixer, mix all ingredients on medium speed until smooth and creamy. Drizzle over warm pancake cups.
