Santa Fe Waffles

2 1/2 cups Krusteaz Belgian Waffle Mix

2 eggs

1/2 cup cornmeal

1 1/2 cups water

1/3 cup oil

1 teaspoon cayenne pepper

1 tablespoon chives, finely chopped

1/2 cup sharp cheddar cheese

1/4 cup black beans, drained

Salsa, optional

Cooked chorizo, optional

  1. // Heat and lightly grease Belgian or conventional waffle iron.
  2. // In medium bowl, blend together Krusteaz Belgian Waffle Mix, eggs, cornmeal, oil, water and spices. Fold in cheese and beans. Pour batter onto prepared waffle iron.
  3. // Cook 4 minutes until griddle stops steaming, or according to waffle iron directions. Serve with salsa and crumbled cooked chorizo, if desired.
