2 cups Krusteaz Organic Buttermilk Pancake Mix

1 ¼ cups milk

1 egg

¼ cup oil

3 tablespoons ricotta cheese

2 tablespoons finely grated lemon zest

  1. // Preheat griddle to 375°F (medium heat). Lightly grease griddle.
  2. // In medium bowl, whisk together all ingredients until blended. Let batter stand 4 minutes. Pour slightly less than 1/4 cup batter per pancake onto lightly greased griddle.
  3. // Cook 2 minutes on each side, turning only once. Top with vanilla yogurt and lemon zest, if desired.
