1 box Krusteaz Southern Style Cornbread & Muffin Mix
1 cup milk
⅓ cup butter, melted
2 eggs
⅓ cup pepperoni, chopped
3 tbsps roasted red peppers, diced
½ cup cherry tomatoes, quartered
½ tsp oregano
½ cup shredded cheese (Cheddar, Mozzarella, etc.)
Marinara sauce, optional
STEP 1

Heat oven to 400°F. Lightly grease 10-inch cast iron skillet.

STEP 2

Prepare the peppers and tomatoes, and chop the pepperoni.

STEP 3

Whisk together milk, melted butter, and eggs in large bowl. Add cornbread mix, pepperoni, peppers, tomatoes, oregano, and shredded cheese. Stir until blended.

STEP 4

Pour batter into prepared skillet.

STEP 5

Bake 24 - 26 minutes or until a toothpick inserted in center comes out clean. Top should be golden brown.

STEP 6

Serve warm with marinara sauce, if desired.
