1 package Krusteaz Chocolate Chunk Muffin Mix
1/2 cup strong brewed coffee
1/3 cup vegetable oil
1/2 cup chocolate covered espresso beans, finely chopped
- // Heat oven to 400°F. Lightly grease or line muffin pan with paper baking cups.
- // In medium bowl, stir together Krusteaz Chocolate Chunk Muffin Mix, coffee, oil and eggs until well blended. Fill prepared cups, filling 2/3 full. Top muffin batter with chopped espresso beans.
- // Bake 17-19 minutes or until golden brown. Cool 5 minutes before removing from pan.
