Corn Fritters

1 Cup Krusteaz Buttermilk Pancake Mix
1/2 Cup Whole milk yogurt
1/4 Cup Water
1 Jalapeño, seeded / minced
2 Scallions, finely chopped
1 1/2 Cups Fresh corn kernels, taken off the cob
1 TSP Salt
1 TSP Cracked black pepper
1 TBS Vegetable or canola oil
STEP 1

Combine all of the ingredients except the oil into a bowl.

STEP 2

Heat oil in deep fryer or pan to 350'F.

STEP 3

Carefully drop ping pong size balls of fritter batter into oil - 5-6 at a time so oil temperature doesn't drop too much.

STEP 4

Fry until golden brown on all sides and drain on paper towels or newspaper.

STEP 5

Serve on their own, or with yummy BBQ.

*Frozen corn can be used instead of corn on the cob*
