Corn Fritters

This mouthwatering Corn Fritters recipe combines fresh corn kernels with a flavorful batter creating crispy golden bites of delight. These savory fritters are perfect as an appetizer or a side dish offering a delicious blend of sweet and savory flavors with a satisfying crunch.

1 cup Krusteaz® Buttermilk Pancake Mix
½ cup Whole milk yogurt
¼ cup Water
1 Jalapeño, seeded / minced
2 Scallions, finely chopped
1½ cups Fresh corn kernels, taken off the cob
1 tsp Salt
1 tsp Cracked black pepper
1 tbsp Vegetable or canola oil

Combine all of the ingredients except the oil into a bowl.


Heat oil in deep fryer or pan to 350'F.


Carefully drop ping pong size balls of fritter batter into oil - 5-6 at a time so oil temperature doesn't drop too much.


Fry until golden brown on all sides and drain on paper towels or newspaper.


Serve on their own, or with yummy BBQ.

*Frozen corn can be used instead of corn on the cob*
