2 cups Krusteaz® Buttermilk Pancake Mix
2 tbsp Vegetable oil
1½ cups Cold water
1 Egg (for batter)
2 Eggs (for scrambling)
4 tbsp Gruyere cheese, shredded (or any shredded cheese)
½ cup Cherry tomatoes, diced
½ Red bell pepper, sliced thinly
½ Orange bell pepper, sliced thinly
16 Basil leaves, sliced or torn
STEP 1

Using a whisk, blend oil, water, 1 egg, and pancake mix in a medium bowl. Set aside.

STEP 2

Scramble 2 eggs with Gruyere cheese in a skillet until fully cooked. Set aside.

STEP 3

Pour 1/3 cup batter onto lightly greased and preheated waffle iron.

STEP 4

Place ¼ amount of each: scrambled eggs, cherry tomatoes, bell peppers, and basil leaves onto batter.

STEP 5

Pour an additional 1/3 cup batter onto toppings. Cook waffles until steaming stops or until golden brown; about 5-6 minutes.

STEP 6

Serve hot.

Adding the cheese into the eggs while scrambling helps keep the frittaffle from sticking!
