Tropical Dream Pancakes
Preheat griddle to 375°F. Lightly grease griddle.
For Pancakes: In medium bowl, blend together Krusteaz Blueberry Pancake Mix and water with a wire whip. Batter will be slightly lumpy. Pour slightly less than 1/4 cup batter per pancake onto prepared griddle.
Cook pancakes 1-1 1/4 minutes per side, or until golden brown, turning only once.
For Topping: In small bowl, blend together sour cream, pineapple, coconut and powdered sugar. Spoon over pancakes. Garnish with macadamia nuts, if desired.
