It’s holiday cookies baking time!! It’s seriously one of my favorite things about the holidays. Every year, I bake dozens of cookies to ship to friends and family and each year I try two or three new recipes. Although this year, my husband insists I bring back the ginger molasses cookies from two years ago and my father-in-law already put in a request for these homemade peppermint marshmallows. But I am still going to add new cookies to my holiday boxes and these cranberry orange vanilla cookies are a great contender.
Prep time: 10 minutes
Total time: 55 minutes
Servings: 12-16 cookies
1 package Krusteaz Butter Vanilla Sugar Cookie Mix
1 large egg, at room temperature
½ cup unsalted butter, softened at room temperature
Zest of 1 medium orange
1 tablespoon orange juice
½ cup fresh cranberries
1/3 cup white chocolate chips, optional
In a medium bowl, beat the egg, butter and orange zest until combined.
Add in the cookie mix and orange juice. Mix until dough comes together. Fold in cranberries and white chocolate chips if using.
Using a medium cookie scoop, scoop dough into balls and place onto a baking sheet lined with parchment paper. Chill dough for at least 30 minutes.
Preheat oven to 350°F. Bake cookies until lightly browned around the edges, about 9-11 minutes.
Let cookies cool on baking sheet for 2-3 minutes before moving to a cooling rack.
