Caramelized Onion & Bacon Bites

New Year celebrations are on the horizon - how will you be ringing in the new year? For us, we're ending 2015 with good friends, great food and lots of laughs as we will be attending a comedy show. One of our favorite comedians is Jim Gaffigan and he usually performs a new year's eve show in Milwaukee. Our friends and family will be joining us for dinner before the show and we'll be laughing it up until midnight, I'm sure! Now if you're planning on celebrating the New Year by staying in or partying it up with friends, many folks will have a variety of appetizers to share. Here's one of my favorites lately - Caramelized Onion & Bacon Bites. Sweet caramelized onions and smoky bacon are set in a flaky crust with creamy mozzarella cheese...

Total time: 42 minutes
Servings: 6-8


1 cup Krusteaz Pie Crust Mix
2- 3 tablespoons ice cold water
2 tablespoons butter
1 tablespoon extra-virgin olive oil
2 large onions, chopped
Salt and pepper to taste
1 teaspoon sugar
1/2 cup crumbled cooked bacon
1 cup shredded mozzarella cheese


Preheat oven to 350°F. Lightly spray mini muffin pan with cooking spray. In a large skillet over medium high heat, melt butter and olive oil. Add chopped onions to skillet, season with salt and pepper. Cook 3-5 minutes, until the onions soften.

Add sugar to the onions and continue cooking 15-20 minutes until gently browned. Stir frequently. Remove from heat and allow to cool.

Mix the pie crust mix and ice cold water until dough forms. Roll a small piece of pie dough into a quarter sized ball. Place a ball of dough into each mini muffin cup. Carefully press dough on bottom and sides of each muffin cup to create crusts.

Place a small spoonful of caramelized onion into each mini muffin cup. Top with a sprinkle of bacon and mozzarella cheese.

Bake 10-12 minutes or until cheese is bubbly and lightly browned. Remove from oven and serve slightly cooled.
