Apple Cranberry Cobbler

FOR FRUIT FILLING:
6 Medium Granny Smith apples, thinly sliced
1 1/2 Cups Dried cranberries
1 Cup Sugar
2 Tsp Ground ginger OR 1 TBS fresh ginger, grated (optional)
1 Tsp Lemon juice
3 Tbsp Butter, cut in small cubes
FOR COBBLER TOPPING:
4 Cups Krusteaz Buttermilk Pancake Mix
6 Tbsp Butter, melted
2 Eggs, lightly beaten
1 Cup Water
STEP 1

Heat oven to 400°F. Lightly grease 13x9-inch pan.

STEP 2

For Filling: Combine apples, cranberries, sugar, ginger, and lemon juice. Spread fruit evenly in bottom of prepared pan. Distribute butter over top of fruit.

STEP 3

For Topping: Combine pancake mix, melted butter, eggs and water until moistened. Drop mixture over fruit.

STEP 4

Bake 35-45 minutes or until top is golden brown and filling is soft and bubbly.

STEP 5

Serve warm with whipped topping or ice cream, if desired.
