Lemon Ricotta Pancakes
Preheat griddle to 375°F (medium heat). Lightly grease griddle.
In medium bowl, whisk together all ingredients until blended. Let batter stand 4 minutes. Pour slightly less than 1/4 cup batter per pancake onto lightly greased griddle.
Cook 2 minutes on each side, turning only once. Top with vanilla yogurt and lemon zest, if desired.
