Summertime means cobbler in our home. We love making berry and peach cobbler. We love to top everything with ice cream! Only problem is trying to photograph something with ice cream on it when it is 110-120 degrees F outside! These bars are very yummy with just the frosting on them. It makes them way more portable to take to gatherings or delivering treats to neighbors, friends, or family.
So don't feel like these HAVE to have ice cream on them to be yummy. But if you can, top them with ice cream! Using Krusteaz Snickerdoodle Cookie Mix makes them the perfect texture to give the bar feel while also having the cinnamon sugar touch of cobbler! Bars 1 package Krusteaz Snickerdoodle Cookie Mix
1 egg 1/2 cup (1 stick) butter, softened
2-3 fresh peaches, sliced thinly Glaze
1 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 Tablespoons milk
Preheat oven to 350°F. Lightly grease an 8x8x2-inch square inch pan. In a large bowl, stir cookie mix, butter, and egg until blended. Press 1/2 of dough into bottom of baking dish. Sprinkle 1/3 of the cinnamon sugar topping onto dough. Arrange sliced peaches evenly over dough. Sprinkle 1/3 of the cinnamon sugar over peaches.
Crumble small pieces of remaining dough onto peaches to create a crumb topping. Top with remaining cinnamon sugar. Bake 30 minutes or golden brown. Cool on a wire rack. Combine all glaze ingredients in a small bowl and whisk until smooth. Drizzle over cooled bars. Serve with vanilla ice cream and caramel if you would like.
